Zesty Grilled Shrimp Skewers

Ingredients

  • 1 pound of large shrimp, peeled and deveined
  • 3 tablespoons olive oil (or avocado oil)
  • 2 tablespoons lemon juice
  • 1 teaspoon oregano
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional: Chopped parsley and lemon slices for serving 
     

Instructions

  1. Prepare the marinade: In a large bowl, whisk together the olive oil, lemon juice, salt, pepper, oregano, paprika, and garlic powder.
  2. Marinate the shrimp: Pat the shrimp dry and add them to the marinade. Toss gently to coat the shrimp evenly. Marinate for at least 15 minutes or up to 2 hours.
  3. Prepare for grilling: Skewer the shrimp onto bamboo sticks or metal skewers.
  4. Grill the shrimp: Heat your grill or grill pan to medium-high heat. Grease the grill grates. Place the shrimp skewers on the hot grill.
  5. Cook and serve: Grill for 2-3 minutes per side, until the shrimp turn pink and opaque. Remove from the grill and serve warm. Garnish with chopped parsley and lemon slices, if desired.

Important notes:

  • Don't over-marinate: Avoid marinating the shrimp for longer than 2 hours, as the acid in the lemon juice can start to "cook" the shrimp without heat.
  • Don't overcook: Shrimp cooks very quickly, typically only 2-3 minutes per side. Overcooked shrimp will become rubbery. You know they are done when they turn pink and opaque.
  • Shell on or off: You can leave the tails on for grilling if you prefer, but peel and devein the shrimp before marinating so the marinade can coat the shrimp fully.
